INSULATOR
This malt forward German Lager with light toast and caramel notes has a big rich flavor with a low hop bitterness. It was aged 8 months in 2nd use barrels; 1st use was port wine, 2nd use was Garrison Bros. bourbon. Then we put our own magic in them.

PEACH BLONDE*
Light, crisp, and just peachy. A Blonde Ale by style with a big peach aroma, subtle peach flavor, but a beer worth having a couple of.
4.2% ABV, 18 IBU
HOP SCHOOL PALE ALE*
A refreshing American Pale Ale with hop notes of citrus and pine. It has a lingering bitterness that drops off just in time to have another sip. This pale ale was hopped with Citra and Mosaic and dry-hopped with Simcoe. These three together will give you an education in hoppiness. School is in session.
5.9% ABV, 38 IBU
NIGHTFALL STOUT*
This Stout is a bold and strong oatmeal stout that has been aged on 10 pounds of Dominican Cacao Nibs during primary fermentation. Post fermentation, it was aged for three months in port wine barrels that came from our sister property, South Coast Winery, in Temecula. The flavor has prominent notes of chocolate and has a rounded tannic structure due to time in the barrel. With aromas of dark fruit and cherry, this beer is perfect for cold weather and good company.
7.1% ABV, 30 IBU
EL BIGOTE
This Mexican Lager is a brilliantly clear light lager brewed with an old world attitude. Equal parts smooth & crisp. Always refreshing with a lime. It is a pilsner malt forward lager with a smooth easy drinking finish. ¡Salud!

HYEBISCUS HEFE
Our Hyebiscus Hefeweizen is back by popular demand and it is full of those herbal aromas and flavors. This beer is terrific for Spring and Summer, especially with a slice of orange. It has a beautiful red color making this beer pop like the hibiscus flowers that were used in the brewing process. Justin used around 16 pounds of dried hibiscus flowers. Six were used in the boil process where color is developed and the other were used in dry-hopping to provide the aroma.

CARTER KÖLSCH
This classic German ale is brewed with an all-German malt and hop bill that was carefully selected for this beer. The product was fermented with a Kölsch ale yeast that comes from our friends at Community Cultures Yeast Lab in San Antonio. The result is a crisp filtered ale with soft grainy pilsner notes. It finishes clean and dry with no lingering bitterness. Prost!

"DARK SKIES" CZECH DARK LAGER
Brewed with Bohemiam pilsner malt as well as a host of other speciality malts to create a complex flavor and deep copper color. Aromas of caramel malt and roasted barley balance this beer out exceptionally well. It has a tan persistent head and a smooth finish.

TOWHEAD BLONDE
This American Style Blonde Ale is a light bodied pilsner brewed with some pale malt thrown in. It has a low hop bitterness with a clean finish. It is a fabulous “Gateway” beer for anyone trying craft beer, and it is good for anyone who just likes a good ol’ light beer. Perfect all year round for chilling and grilling. Cheers!

HELL-RAISER BOURBON BARREL BROWN*
This Hill Country favorite was recently awarded a gold and bronze medal, and is a great representation of barrel aged beer. Brewed with a robust malt bill build for a brown ale and aged in Garrison Brothers Balmorhea Bourbon Barrels for two months. It packs a punch with malty warming notes of vanilla, chocolate, toffee and of course bourbon. Evenly balanced with a low hop bitterness and finishing smooth.

HILL CO. SMOKESHOW
A Bamberg Style Helles Rauchbier, translation: a bright beechwood smoked pilsner lager than is traditionally brewed in Bamberg Germany. Ours is a light bodied pilsner that finishes dry and clean. There is a balance of the flavor of the beer and the smokiness of the pilsner malt. Only 10% of the malt was smoked.

ALL-AMERICAN AMBER
A fine example of an American Amber Ale that was brewed with an All-American malt bill and All-American Hops. Cold filtered to a brilliant clarity, this refreshing beer has notes of caramel and malty goodness that shines through to the end. A late addition of Centennial hops gives it a floral and spicy aroma.

SPARKLING BRUT
85% Chenin Blanc (Lepard Vineyards) 10% Pinot Noir, 5% Chardonnay
Chenin Blanc is a wonderful varietal to use for the production of sparkling wine. Its delicate melon and floral notes are easy to recognize, and teh small addition of Chardonnay and Pinot Noir bring a rich dynamic to the blend. Effervescent and crisp, this wine has all the attributes of classic sparkling wine, and is refreshingly nuanced with very pretty fruit notes from all three of the varietals used in the blend.

SPARKLING TEMPRANILLO ROSE
This sparkling rosé has a delicate aroma of strawberries, cranberry, pomegranate and citrus peel. The light dosage of residual sugar places this wine in the brut category and gives a lushness to the mouthfeel while balancing the bright acidity.
